This full version video will show you step-by-step how to make a culinary delight by using a salted egg yolk and pumpkin. We need two salted eggs. First remove the salt by using a bag to hold the salt. It is quite dirty & will be a mess if you only use your hand to do so… Wash away the remaining salt from the egg shell and clean thoroughly. Crack the egg and separate the egg yolk and egg white. The egg white will save for another dish. Steam the 2 egg yolks for 6mins. When they are cooked, mash them for later use. One small pumpkin is used. Peel off the skin and cut into half. Take out the seeds and cut into slices. Wash them gently and dry. Sprinkle some corn starch into the pumpkins to ensure there is an even layer of coating. Heat up some oil. Use a chopstick to test the temperature whether the oil is hot enough. Put the pumpkins in and fry. Fry each side until golden brown. Take up the smaller ones first and then the thicker ones. Put them aside. The oil can be saved for future use. Clean the pan and turn on fire. Cut some unsalted butter. Put into the hot pan. Stir until it melts. Add the mashed egg yolk and stir quickly with the melted butter. Stir & stir until many bubbles appeared. Put back the fried pumpkins and stir gently to mix them well. It is now ready to serve… It is optional to sprinkle some parsley flakes on top of the pumpkins.
