Ingredient list
Potatoes ( आलू ).....................................2 medium
Gram flour ( बेसन )..................................1 cup
Rice flour ( चावल आटा ).........................1/4 cup
Turmeric powder ( हल्दी ).......................1/4 tsp
Red chilli powder ( लाल मिर्च )............. 1 tsp
Garam masala ( गरम मसाला ).............1 tsp
Asafoetida/ hing ( हींग )........................1/8 tsp
Chaat masala ( चाट मसाला )..................1 tsp
Salt ( नमक )..............................................1 tsp
Oil for frying ( तेल )
TIPS
1) Mash potatoes very well to make a fine paste. If there are any lumps of potatoes left in it they will block the fine holes of the sev making plate and sev wont come out properly. You can also use a blender to make a paste.
2) Use extra gram flour (besan) if in case the dough is too soft and sticky. Don't increase the quantity of rice flour.
3) Fine sev won't take much time to fry but if you make thick sev they might take little longer to fry till crispy. Don't keep these sev for long in oil or else they will absorb too much oil.
4) Store aloo bhujia only when they are cooled down completely in an airtight container. They will stay good for a month.
