Ingredients:
1 cup Onion thinly sliced
4 tbsp besan (gram flour)
1 tbsp rice flour
1/2 cup chopped fresh coriander leaves
1/2 tsp cumin powder
1/2 tsp red chili powder
1/4 tsp turmeric powder
salt to taste
Lemon juice
1 tbs Green chilli
Water (as needed)
Oil (for deep frying)
Instructions:
In a large mixing bowl, combine besan (gram flour), rice flour, chopped coriander leaves, green chilli, cumin powder, red chili powder, turmeric powder, salt, and lemon juice. Mix well to combine all the dry ingredients.
Gradually add water to the mixture, stirring continuously, until you achieve a smooth and thick batter. Make sure the batter is not too thin or too thick. It should have a pouring consistency.
Heat oil in a deep pan or kadai over medium heat for deep frying.
Take a small portion of the batter and drop it into the hot oil. If it sizzles and rises to the surface immediately, the oil is ready for frying.
Once the oil is hot, using a spoon or your fingers, drop small portions of the batter into the oil. You can shape them into small round pakoras or any desired shape.
Fry the pakoras in batches, making sure not to overcrowd the pan. Fry until they turn golden brown and crispy on all sides. Stir occasionally to ensure even cooking.
Once the pakoras are cooked, remove them from the oil using a slotted spoon and transfer them to a plate lined with paper towels. This will help absorb excess oil.
Repeat the frying process with the remaining batter until all the pakoras are done.
Serve the pakoras with mint chutney, tamarind chutney, or ketchup. They make for a perfect tea-time snack or appetizer.
