Spring Rolls
Ingredients
Croc and marinade
350g crocodile- minced or finely sliced
¼ teaspoon salt
2 teaspoons lemon myrtle
½ teaspoon cornflour
¼ teaspoon pepper
Filling
2 Tablespoon oil
1 clove garlic
2 medium carrots
1 small cabbage
1 bag Bean sprouts
1 Tablespoon lime juice
2 Tablespoons soy sauce
Salt and pepper
½ teaspoon brown sugar
2 tablespoons cornflour, dissolved in 2 Tablesoon water.
For wrapping
1 pkt spring rolls wrappers.
1 Tablespoon cornflour, dissolved in 1 Tablespoon water
Canola oil for frying
Method
1) Mix the crocodile with the marinade ingredients and set aside for 30 minutes.
2) Grate the carrot, crush garlic.
3) Finely slice the cabbage.
4) Heat oil and fry off cabbage and carrot, add garlic. Cook until starts to soften.
5) Add bean sprouts . Stirfry 1 minute. Remove from pan.
6) Wipe pan clean, add 1 Tablespoon oil and add crocodile. Toss quickly, then add vegetables back to pan.
6) Stir in soy sauce, lemon juice, salt, pepper, sugar and cornflour/water mix. Stir to combine (there should be no liquid left in pan). Cool for 1 hour.
7) Lay out spring roll wrapper and spoon 2 tablespoon full of filling on each one. Roll up and secure with the cornflour/water mix.
8) Fry in oil until golden.
