Crown of the day of kings (January 6) Traditional sweet Spanish
Recipe step by step to make the famous Roscón de reyes typical in Spain and all South America.
It can be filled with whipped cream, pastry cream, chocolate, turros or without filling.
There are many pagan traditions that over the years have been incorporated into religious celebrations, and this is the case of the famous 'Roscón de Reyes', which as you well know is taken for dessert and / or snack on Three Kings Day, this being the last of the celebrations of the Christmas period.
But this delicious sweet that becomes the undisputed protagonist of the after-dinner every 6th of January.

INGREDIENTS:
Preferment:
200 ml Warm cow's milk
120 gr All-purpose wheat flour (10% protein)
45 gr Sugar
7 g Dried baker's yeast (1 sachet)
or a 25g tablet of fresh pressed yeast.
Dough:
Preference that has been made before.
380 gr All-purpose flour (10% protein) (less protein less liquid to add)
120 gr Unsalted butter
70 gr Sugar
1 Egg M
5 gr Salt
1 tbsp Honey
1 tbsp Orange blossom water
Grated lemon rind 1 lemon
Grated peel 1 orange
Decoration:
1 beaten egg
Candied fruit to taste
Filleted almonds
4 tbsp Sugar
1 tsp Orange blossom water
