As a Telugu girl, I can say that the comfort n soothing feeling that daddojanam gives is like bliss..☺️ Having it with Dosaavakaya (yellow cucumber pickle) or Mango pickle or Lemon pickle takes the feeling to next level. This recipe u have shown is of South-Indian hotels. In the authentic South-Indian temple prasadam, green chillies n pomegrenate are not used. Instead crushed pepper is put n it tastes divine😌 Also eating curd rice on a banana leaf is undescribable👌

Your pronunciation is bang on for someone who has probably never spoken Tamil in his life. It is “Mor Milagaai”, where the Mor is pronounced like the Hindi word for peacock. Also, I cook the tadka in coconut oil, love it that way. ❤️ curd rice tastes amazing with crispy aalu fry.

Being a Konkani our staple food is rice and once child turns one year old, our elders start kids food with curd rice, buttermilk rice and milk rice,our lunch and dinner is incomplete without curd rice and milk rice, which easily helps in digestion of all the spices we had before, Thank u bro for this yummy food my mouth is just watering like anything❤❤😋😋😋

@@beingaPrince Ayurveda also says u should have everything in moderation. u can make curd rice with only curd as well without milk. It will be tasty too . There are different options for food recipes to make it healthy. Just don't forget that. Btw Ayurveda also says u should not eat fish and curd together, but aren't there people who eat it together😂😂. There are fish curries which add curd to it.

For a more nuances preparation and add fresh cream of the milk instead of white butter. Each ingredient will alter the texture of the curd rice.😉🙌🏾 Happy to watch a chef teach how a curd rice is done. I hate north indian 5* hotels make crud rice. This video has proper instructions.

I was hesitant to use the same amount of milk as curd but the curd rice surprisingly turned out amazing. I honestly wish i hadnt put a tadka because the plain salted curd rice was in itself so good. Thank you for the recipe

Superb, Chef.. My mom makes curd rice for travel or for later use this way. She mashes the rice when its hot, and adds hot milk, mixes and leaves for a couple of minutes. The rice thickens. Then she adds hot milk again , as much milk to make the rice sort of semi solid. Then let's it cool. Then she adds a tbsp of curd , salt and tadka of mustard seeds, finely minced ginger, Hong and curry leaves. This doesn't become sour easily. Can be used even after 2 days- just add milk or water and mix when serving. Helpful during hot summer for packed lunches.

To tell you the truth, I am not much of a curd rice fan (even though my friends keep on going about the merits of the thing) but the way you made sounds interesting and textural. And adding ginger, chillies and promogranate brings in the freshness that is so often lacking curd rice atleast the one I have had so far. Use of milk seems counter intuitive along with curd but it could be the single most important factor that could help in controlling the sourness that often ruins the curd rice experience. Kudos chef!! I would definitely try this recipe!

Actually, it is a good idea to add a few ice cubes to the curd rice at the end and bury it in the dish. It will be it chilled till it is eaten and will also provide water that the rice needs

Adding milk and a little curd is the way to do it. That way it will not go sour. Add ice cubes in summer after the curds are set.

Soul comforting recipe Chef. I make curd rice by setting the curds in the rice itself along with the tadka. Once the curd is set. Keep the curd rice in the fridge for sometime before serving. This chilled recipe of curd rice is awesome. Try it !

Chef being tamilan we follow few steps more , in tadka mostly we add mustard and raw peanut. And also add two to three spoons of fresh cream it gives great texture to the food.

While cooking the rice put about half cup milk. When we make for naivedya especially then we actually put only one tablespoon curd and add lukewarm milk to the rice. So we actually dahi jamate hain. We do this cod we don't curd rice to become sour and we can't put bhagwan ka prasad in the fridge till the pooja is done.
