I really want to try making to use a cake I plan on baking from your other video (lol), but I don't have any vanilla pods and they're a bit pricey right now. Could I use vanilla extract? and if so how much?

hi chef.. I want to ask you.. with this amount of custard cream, how much whipping cream I need to make diplomat cream ?
I just tried with this for half amount of the recipient, but with sugar cut to 10g, I find the consistency of the custard during the cooking process when it continues to cook through the flour is not as smooth and liquidy as in video, but can see it became more smooth compare the start of the cooking process where it starts to form the lumps, would that be too much sugar cut or I overcook it ?

Dear Lian, thank you. The sugar's water-holding properties prevent the eggs from solidifying on their own. So, if you reduce it too much, it may harden on the egg alone. With This recipe as it is, even if you overcook it will not harden with just the egg. Thank you for your continuous support.
Hi chef, will this creme patissiere be think enough to use as a doughnut filling? Should I not mix with heavy cream? Also what if we don't have the alcohol spray. Thank you

Dear Mireille Artin, thank you. You can use this for it, just use the one before you mix it with HEAVY CREAM. There is no substitute for alcohol spray. But if I had to guess, it would be spirits. Thank you for your continuous support.
