Should use a very sharp flexible boning knife to skim under the silver skin, angle up and scrape along the tissue. Using a scimitar and hacking is just a waste and shows lack of attention to yield.

Most of it goes right back into ground meat to give you a 40/60 or an 80/20... However she is still really careless with her cutting technique

There are 2 schools of thought for when trimming beef. The American and Australian system favors speed and sales volume in meat processing due to high consumption per capita. No time to be nitpicky about every piece of sinew. Everywhere else prefers conservative trimming due to not having a large cattle industry and the high price of red meat. Of course it's eye-watering to see so much meat trimmed from a good cut of beef. You could always buy a whole rump and do it to your liking.

we cut them into top sirloin cap steaks in the store I work, just make sure you cut against the grain and not with it. you can usually get 5-7 steaks depending how big the cap was and how this you decide to make them.

yes, also they call it The Queen ;) but not whole cap, only portion of it,... there are three veins over there,... between 1 and third vein is great, after third one they cut it off.

Is the top sirloin different from the regular sirloin . And also from what cut do u harvest a regular sirloin steak. Thanks.

We call the top sirloin Popeseye here in Scotland, its proper name in the UK is D-Rump. I think the Americans call Sirloin "strip steaks" or new york strip (?). The sirloin is that long muscle running down the back either side of the spine, the tenderloin (Fillet steak) runs with it on the other side of the T-Bone. I surmise they call the D-rump top sirloin because of its position relative to the sirloin.

Lol so in the video she properly removes the cap and trims up the butt to be ready to made into steak or roast, if you cut down the middle facing the bad side away from you 1 verticle cut... that leaves 2 ends... one half is ment for top sirloin roast and the other is ment for steak. Also theres a bottom sirloin... Theres also a sirloin tip... which isnt sirloin at all. You might also know it as peeled knuckle.

You can, but you wouldnt. As the standard for fat cap on steak basically everywhere is 1/4inch of fat on beef and 1/8th of an inch on pork.

I've been a professional meat cutter for 15 years. I watch these kinds of videos to better my technique and to further perfect my market but I'm sorry to say that I feel like I took a step backwards after watching this.

@@dustin5682 okay. So based upon you're comment, you're the person im looking for... I just bought a big hunk of sirloin tip. Looks like what she has but with more fat on the outside. (Sams club) Can I just go along the natural separation of this meat ( like what she did with her first cut. It just pulled apart because there's already a separation) and get some good pieces for my family?

The tri tip is from the bottom sirloin. The cap is the culotte, aka picanha.
