List of spices for the spice mix:
Makes about 8oz of Spice Mix:
1 Tbsp Cumin Seeds
3 Tbsp Coriander Seeds
8 - 10 Cloves
1 Cinnamon Stick
10 - 12 Green Cardamom Pods
2 Black Cardamom Pods
Few Bay Leaves
1 Tbsp Black Pepper
2 Star-Anise Pods
5-6 Dried Red Chilies
2 Tsp of Dried Pomegranate Seeds
1 Tsp of Carom Seeds
2 Tsp of Turmeric Powder
2 Tsp of Aamchur (Dried Mango Powder)
1/2 Tsp of Ground Mace
1/2 Tsp of Freshly Grated Nutmeg
If you are an absolute beginner, the five spices you should start with:
Cumin Seeds
Turmeric Powder
Coriander Powder
Red Chili Powder
Garam Masala
I forgot to add bay leaves in the first version. But the garam masala I used has bay leaves, so it all works out.
