it's NOT JUST CURRY | How to make any Indian Curry
I mentioned "curry" as *chicken cooked in onion and tomato gravy along with spices*, that's not true - it's my mistake.
Here is an accurate description:
*curry = meat, fish or vegetable stew cooked in onion and tomato gravy along with spices.

All the vegetable curries can be vegan if you use vegetable stock or just water. I didn't add any butter also at the end because, it's very flavorful just with the stock and it didn't need any butter or more fat.
You can finish all these curries with butter at the end if you want.
You can make at least 10+ curries just by referencing this video.
Few curry ideas:
Chicken/lamb/goat Curry
Fish/Shrimp Curry
Eggplant/Potato/Paneer/Egg/Mushroom/Cauliflower Curry
Other than just the above mentioned curries, you can make combinations of different vegetables and meats. These combinations are endless.
Here are few ideas: (You'll find all these dishes in most of the Indian restaurants in the US)
Chicken + Mushroom Curry (Chicken Mushroom)
Paneer + Matar(Peas) Curry (Matar Paneer)
Potato + Cauliflower Curry (Aloo Gobhi)
Chicken + Matar(Peas) Curry (Chicken Matar)
Mushroom + Matar(Peas) Curry (Mushroom Matar)
Potato + Matar(Peas) Curry (Aloo Matar)
Template for a curry:
(Makes 2-3 servings)
Ingredients:
1 medium sized onion
2 tomatoes (double the quantity of onions in weight)
1 tbsp tomato paste (optional)
green chilies (optional)
1 tbsp ginger-garlic paste (fresh ginger-garlic also works)
1 tsp cumin seeds
1 tbsp oil
vegetable/chicken stock or water
garam masala
fresh coriander leaves/cilantro (optional)
Saute any vegetable/meat in the onion-tomato gravy for few minutes, add the stock and cook until the sauce reaches your desired consistency and the vegetable/meat is cooked through.
Finish it with garam masala and fresh coriander leaves.
Using some kind of stock elevates the taste of your curry. You can use water as well.
