White Biryani Recipe
Yakhni/stock
Boil 1 kg meat of your choice (chicken/beef/mutton)
Add green chillies, sabit garam masala, one large onion
Strain, reserve the stock, serve with biryani, use in making biryani masala and rest in boiling rice
Biryani Mix:
250 grams yogurt
Kari patta 8-10
Salt to taste
Cumin corriander crushed 1½ tbsp
White pepper powder 1 tbsp
1 cup brown onion
Aloo bukhara 8-10
2 tomatoes
3 tbsp chopped coriander
1 tbsp ginger paste
1 tbsp garlic paste
Onion and green chillies (boiled with stock)2 2 2 tbsp green chilli paste (spicy ones).
Cooking:
4-5 tbsp oil
Add meat
Sabit garam masala
√ 1 tbsp cumin seeds
√ 1 tbsp coriander seeds
√ 10-12 red button chillies
√ 1 cinnamon stick
√ 1 green cardamom
√ 1 black cardamom
√ 1 tbsp fennel seeds
√ 10-12 black pepper corns
√ 5-7 long
Rice 80% boiled in the stock
plus plain water and chopped coriander
Salt and
