I wish I had seen this video before yesterday. I dehydrated 3 medium zucchini by shredding them and spreading the shreds across 4 Nesco trays lined with parchment paper. I was shocked that I ended up with just over 1 cup of dried zucchini! LOL! I also liked your fry-sized sticks for noodle replacement as I am gluten sensitive. Thanks so much, Heidi!

Make zucchini milk. Take skin off, chop up, put in blender and get it as close to liquified as you can get with your blender. If necessary, strain to remove any seeds. Grab whatever containers you like and toss in the freezer. Use zucchini milk for anything that calls for milk or water, eg. bread, cakes, casseroles, soups, stew, etc.. Great way to use up extras and adds nutrition to other dishes. Kids won't know the difference if this is an issue. Have a great time playing with this.

I’ve been dehydrating mine then grinding it into powder. My plan is to use the powder in soups and sauces as a thickener and to add some extra nutrition for my kids (and husband 😆) who don’t always enjoy eating veggies.

This week I opened a jar of zucchini and yellow squash dehydrated and vacuum packed in 2016. I was pleasantly surprised that they didn’t go mushy like fresh zucchini does!!

How to take the zucchini and run it through a Salad Shooter which cut them Slim then I put them in a bucket and soak them overnight with water and apple cider vinegar I put them on the drying racks to dry and I use pink salt I sprinkled on them and let it dry they were awesome I had a sister-in-law that I gave her a quart jar of them and she started eating them and got sick on our way home on a plane they ate too many of them without enough fluid she lives through it and still wanted more thank you so much for the good words of wisdom and yes I do praise him all the time and all the time God is good

Good video! I've been dehydrating zucchini for years but never thought to try it in a matchstick shape, your idea for using it as a noodle replacement is great. I normally do long strips for lasagna and just add a little extra water to my pasta sauce and don't pre-soak. The next thing I'm going to try is a pizza recipe that uses 2 1/2# of zucchini. ('Summer Squash Pizza' from Smitten Kitchen) Have a great weekend!

I love zucchini dehydrated. We did 1/2" slices quartered for minestrone soup and thin chips seasoned (no oil) for serving with dip. If the fruit is small, you can cut on the diagonal to get a bigger chip. I like your idea of the skinny french fry size for noodles.

Just ordered this dehydrator and four of the flat silicone trays! I bought an air fryer toaster oven that had a dehydrating feature....no good!! Thankfully it bakes and air fries great and it keeps me from having to turn on our big gas oven!

I have to remove eggs from all my squash every single day. The moths show up shortly before the plants start blooming. I only have 5 squash this year and get a couple hundred eggs them off every day. They've been awful this year. Only one got a borer last week, but since I check daily, I got him before the plant wilted. I inject BT right into the stem.

@Denise Hill The eggs are laid on the leaf stems, and most of the larvae bore in from there. This year I used tape to pull off eggs daily & injected BT at first sign of frass.

When you want to make zucchini chips Don't season until you bring them out of the oven. I lightly grease above and below and then right when you pull it out of the oven season. :)

While I do not like to dehydrate slices anymore, I prefer dicing up small because they can go in anything. I add them to soups, sauces, and gravies. And yes, they do no turn to mush

When the zucchini gets really large like that, I always slice it right down the middle, and scoop the giant seeds out. Save the seeds for next year. I always slice mine on a mandolin, so I could get nice even thin slices. Growing up, mom made sure I honed my knife skills. A few years ago, I got my very first food processor. It slices in mere SECONDS. My favorite way to eat it is dip it in flour and egg & saute' in butter. 2nd is bread. I don't have a spiralizer, but, always wanted to try one. Eric, from Life in Farmland, showed a nice one with several different blades. Hand crank style. "Zoodles" is what he called them. Zucchini noodles for pasta. That's pretty creative to come up with a zucchini pie!!! When the boys were little, I put pumpkin pie spices in the butternut squash, and it tasted like the real thing without the crust. And, I told them that's what it was. I LOVE being sneaky in a healthy way! LOL! They always begged for whipped cream on top. I know this is a little off-subject here, but, in view of your video on the Wonder Mill grinder, I have been meaning to ask you what the benefits are of going to the hassle of grinding your own. What is the difference between soaking and sprouting? And ... have you ever tried to soak your flour AFTER you have it ground? Yes, I've actually seen some people do that. That's all I can think of for right now. I'm sure I'll have more questions after you answer these. (as usual!) Love & prayers

Grinding our own wheat berries, whether they are soaked, sprouted, or just straight from the bag, is just so much healthier than store bought flours that have had to have the fats and other healthy parts of the wheat removed to make them shelf stable. Some people that have had issues with gluten found they could use fresh ground flour and not have any problems with the products made from that. Though it is likely not the answer for all people who have gluten intolerance, I feel certain it is for a good amount of them. Same thing applies to going to the next step of soaking the grains to break down the phytic acid and make them more digestible. I have yet to sprout then dry my grains myself, I keep saying I am going to try it some day but time gets away from me with all I have to do and it is just another step I do not have the time for. I WILL try it some day though but I am not sure what the benefits of sprouting over just soaking are. I have tried soaking flour before and found it to be a real pain and seemed doubtful it was worth it to me so I did not do it again.

The smaller the zucchini the better in my book 😊 just the fact that they hide so well and one warm and humid day and small is gone!!! After having looked into the plant paradox however, small, without the seeds developed, seems better anyway. In terms of saving them, no dehydrator makes me grate and freeze them. Short term I put some in with my pickles, but I find they are too mushy to do a lot.

I used to grate and freeze but then only used for fritters or zucchini bread. I like to chop into 1" pieces to freeze for stir fries and such, I was surprised the first time I tried it they turned out so well. I am not freezing any this year because I did so much last year, I still have a lot left!

Thank you for this video. Very timely for me as it is a great year for our zucchini. I always freeze at least 35 quart bags of zucchini for breads but have not tried dehydrating. Will definitely do this. Also will try out your idea for zucchini for sandwiches. Looks good. Are your jars vacuum sealed or do they do ok without doing that?

This video has gotten me so excited about dehydrating. I have a bunch of zucchini and red potatoes right now and I was teetering between dehydrator or pressure cooker. Well, after watching this I decided to borrow a pressure canner and buy the dehydrator! Yep thats what Im doing lol. Thanks Heidi! I have yet to have any of mine get that way, even the biggest ones have still been very good, only slightly spongy at the biggest point. I did have some one give me a couple years ago that were hard as a rock and I could not get any kind of knife, no matter how sharp or how big, through them. I had to toss them

I'd love to see a recipe you use the zucchini as a noodle replacement, if you have any. My husband has to be grain free and to make it easy the family has converted and it's hard to find good alternatives. I'm about to slice up zucchini for the dehydrator

I bought an electric zoodle maker and made a lot of zucchini and then dryed. Well, most still setting in pantry, I much prefer the Spaghetti squash - no cutting just taking it out of the shell after cooked and it seems to taste better ( in dishes than the zucchini noodles) in spaghetti and a cream sauce or just plain with a little cheese sprinkled on top. Zucchini (which I love usually) just doesn't match it in taste. I have been in the kitchen with 2 really big zucchini that came by surprise on my plant this year. I wanted chips, but the slicer I have is too thin and I could not even get the zucchini in except in by cutting it into 1/4ths the long way. I recalled making great lasagna with eggplant (which I can't have anymore). I could not even cut into the biggest zucchini with all of my strength and a good knife. UGH! I had never used it before, but I inherited an electric knife. So, I got it out (had my no cut gloves from Amazon on) and with some work, it went through WooHoo. I also made lasagna slices for lasagna, don't know how it will taste, but can use for other things when the time comes.

I am looking for vegtables to dehydrate for long term storage. I am reading dehydrated zucchini is only good for a year. Is this correct ? I am hoping that is not the case especially since I do vaccuum pack with silica gel packs.

Whoever is saying only a year is incorrect, they will last for many years. You only have to worry about loss of quality but even then, it can take years for that if you are vacuum sealing into jars, I never use desiccants nor oxygen absorbers. If the food is fully dry and vacuum sealed, there is need for neither one

I really do not know without taking the time to look online and compare them but I would check to make sure whichever one you get that you can control the temperature. I am pretty sure all the more recent models in the past 10 years or more of Nesco have this control but would be a good idea to make sure. Some of the more expensive ones come with a lot of extra gadgets you may not need as well so that would be the other thing you will want to look at
