Now, you know we got a special place in our hearts at Spatchcock Nation for delicious salt & pepper chicken wings. There are tons of ways to make them, and many people and places drop an amazing sauce on ‘em -- we dig that. We’ve got a few ourselves.
However, one of our favorite ways to have a dozen wings is dry, and one of the best ways is salt and pepper, aka Salt and Peps. We'd be remiss to not throw it back and give a special shout out to the first place we had these, Nibsy’s in Syracuse, NY (off menu of course). Our current research area (and the local bar we frequent) is the iconic Shifty’s, also in Syracuse, known for great wings and live music every night. Their collection of wings are incredible, and maybe the only thing better than the wings and the jams are the awesome people that work there. These beauties are sharp, a lot of flavor and a little bite, and keep you in check. The wings are great too. The perfect balance of crunch, salt and pepper dipped into some creamy bleu? Say less. Have it with hot sauce on the side or not, just quit flapping them lips and start cooking the flappers.

🍽 Ingredients 🍽
-2 lbs chicken wings (party wings, with no flapper on them)
- 1 gallon of peanut oil
- ¼ cup ground pepper
- ¼ cup kosher salt
- (if you want) ¼ cup melted butter
- 4 stalks of celery, chopped in 4” pieces
- 1 cup of creamy bleu cheese

📖 Directions 📖
- Heat your oil to 375 degrees
- Pat your wings dry with paper towels
- Toss the wings in the oil for 7 minutes until they get crispy brown
- Drain shortly on paper towels (20 second)
- In a large mixing bowl, add in half the wings and toss (add in butter here if you want)
- Add in half the salt and pepper and toss again
- Repeat for the second half of the wings
- Serve with four celery sticks, a ¼ cup of bleu cheese and some hot sauce
