Here’s a step-by-step recipe for making chicken fried rice:
Ingredients:
- 3 cups soaked rice
- 1 lb chicken breast (cut into bite-sized pieces)
- 2 tbsp vegetable oil (divided)
- 2 garlic cloves (minced)
- 3 eggs
- 1 cup carrots (chopped)
-1 cup capsicum (chopped)
-1 1/2 cup chopped cabbage
- 2 tbsp soy sauce (or to taste)
-2 tbsp vinegar (or to taste
- Salt and pepper (to taste)
Instructions:
1. *Prepare the Chicken:*
- Heat 1 tablespoon of vegetable oil in a large pan or wok over medium-high heat.
- Add minced garlic and saute it for 2,3 min
- Add the chicken to the pan, cooking until browned and cooked through (about 4-5 minutes). When it changes color then add all the chopped vegetables. Season it with salt and pepper, cover with the lid till the vegetables are properly cooked.
2. *Making egg omelette:*
- In the pan, add a little oil. Season the eggs with salt and pepper and beat them.
- Pour the beaten eggs into the pan and make and omelette them. Once cooked, set them aside and let them become cooler. Cut them into square size chunks with a knife.
4. *Cook the rice:*
Once the vegetables are properly cooked and the water has dried add your measured water for the rice. Add soy sauce and vinegar and let the water boil. Once it starts boiling add your rice and let them cook untill only little moisture is left. Now put the lid on the pot and set the fire on the very low point to put rice on ‘dam’. After 10 min, remove the lid, add omelette chunks and mix properly. Cover with the lid again for 10 minutes.
8. *Serve:*
- Remove the chicken fried rice from the heat and serve hot. You can garnish with extra green onions or a sprinkle of sesame seeds if needed.
