Smoked Deviled Eggs With Rich’s River Dirt!
Today we prepare a tasty snack using a new rub we recently purchased. Rich over at Rich’s River Smokers West Virginia has come out with his own line of rubs and I knew I had to give them a try.
That’s Right! Tango Joe from Tango Spice wants to welcome Rich to the world of Spice Mongering! The Spice Must Flow!
Our first impression of Rich’s River Dirt / All Purpose is all positive. This rub has a darn nice aroma, very good color and a nice warm heat. The flavor is really nice, and I can see using this in MANY recipes.
I cooked some frog’s legs which had been marinated in a Mead & Honey mixture with River Dirt and then coated again in River dirt - those were Awesome!
Here is what we used for our Smoked Deviled Eggs.
8 Hard Cooked Eggs / halved, yokes removed
The whites were smoked using the Amaz-N-Smoker maze with hickory pellets for 35 minutes. Cut side down, coated with River Dirt.
Filling:
8 Hard Cooked Egg Yokes
1/2 Cup Dukes Mayo
1 TBS Diced Jalapeno
1 Slice Crispy Cooked Bacon / crushed
2 tsp Rich’s River Dirt / All Purpose
1 tsp Rice Vinegar
Blend this well, then fill the smoked whites. Place these in the fridge for at least one hour.
Serve and Enjoy!
