for the dough: 600g 0, plain or all purpose flour, 10g yeast, 50ml extra virgin olive oil, 1/2 teaspoon salt, 300-400ml water
For the onion filling: 1kg onions, 2 tablespoons chopped parsley, 15 Gaeta black olives, 10 cherry tomatoes, fresh red chilli to taste, salt.
for the escarole filling: 1 head of escarole, 15 olives, 1 large garlic clove, 10 cherry tomatoes, salt.
