Have you considered the two-part expanding foam that they use in the hulls of boats? Curious as to how it would work

I was going to mention the same thing. You will definitely miminize the amount of voids. A little tricky to work with if you have never messed with it though.

What are you using for the flooring then? I don't mind the condensation (will be outside), but I also want to insulate the bottom...

You'll only need to insulate the bottom of the tank. For some builds you can just leave the bottom floor of the mechanical area open to the concrete to help with this.

What’s the spa hose that goes to each side of the tank then connects in the middle for? I assumed one hose to the pump from the tank, then one from the filter back to the tank. Do you have two entry points for returning the water to the tank?

That was me correcting a mistake/afterthought I had. But its two holes leading down to the pump

I do however have it built and have thr 2 inch foam board already around it . I just need to fill it all with spray foam.

If you create a vapor barrier and adequate insulation you won’t get condensation. The warm moist air will never touch the cold tank and condense. Block the vapor with 100% sealed cavity. Batts would be just fine.

Most that I've seen are people just wrapping with their tank with the insulation.

3:37 what did you use for the lid? It appears to be foam board that's wrapped in plastic. I need a lid for my trough too.
