I know this is a post from two years ago, but I made this bread a couple of days ago and it was a big hit with the family. I baked it on a Wednesday night and on Thursday morning my wife and I traveled to Central Utah to do some camping with extended family. On Friday I unwrapped it and let the family make some standard lunch meat and cheese sandwiches. They said it was some of the most savory bread they had ever eaten. Later that evening some of the family used the bread for toasted cheese sandwiches. They loved it. It was not a difficult bread to make and the results were wonderful. This will definitely be on a regular rotation at my home and for my family and friends.

I finally got the chance to make this bread. Let me say that as long as you follow the instructions, you should be great. The amazing cheesy taste, hotness of the jalapeño and the texture of the bread was AMAZING!!!! My husband took a few slices to his work and his co workers had some and they loved it. They thought my husband had bought it from a bakery. Two thumbs up!!👏👏👏👏👏👏👏👏

I know this is an old recipe. But I made it today. Here are some tips. 1. use rice flour or a bit of olive oil on ur parchment to prevent sticking 2. Don’t dump all the flour mixture into the water& yeast. Incorporate the water into the flour holding back a 1/2 cup to get right consistency. It needs to be sticky but firm not watery. The type of flour and humidity in the air can change the amount of water. 3. You can finish the mixing stage and pop in fridge overnight then continue to next step. But rising time will be 1-2 hours not 30 minutes because it’s cold out of fridge. 4. Place two ice cubes under parchment into hot Dutch oven before u place lid on. Will cause a steam pocket for better rise. 5. The first rise for one hour is a guideline. It should be double in size. Mine took 1 1/2 today. It depends on the temperature in your house I usually make this with sourdough starter. It was good but not as flavourful as sourdough.

Not necessarily. If you don’t want to make it the same day then you can let it rest in fridge overnight. If you want to make same day let rest on counter or warm spot until doubled. Time will depend on different variables but 1-2 hours on average for first rest.

@Laneymac i have a question about dough out of fridge vs room temp. Do you see a difference between baking cold dough as opposed to room temp dough? Also does sharpness of cheese effect the baking? Sharp vs mild? I am on a quest to perfect my bread, i am making 2 loafs/doughs a day. Baking so much but i have learned on each batch. Currently i am 3 weeks into it and have given all my neighbors so much bread that i am starting to try the cheese/vegetable breads. Any advise is greatly appreciated.

Just an outstanding video without all the irrelevant and confusing fluff. I make this awesome loaf all the time. I've even shifted it up by replacing the Jalapenos with fresh fried bacon bits & strips on top... awesome bacon cheese bread. Another is olive parmesan chesse bread. Kalamata olive (or black) bits inside with a teaspoon of minced garlic and sliced olives on top.

Wow! Just made it and it's beyond delicious. I only used one jalapeno, diced, because of the comments. I put 3 ice cubes in the pot (Sarah Owens) when I put the dough in. Everything else I did was following the video and it came out great. Let it sit for an hour before cutting into it.

Just made this following the recipe verbatim with one small change. I used nonstick spray on the parchment paper and the bread came off with zero stickage (that's the scientific term for it). Haven't tasted it yet, but will update in exactly 47 minutes once the hour wait time is up. Looks amazing though, just like the video. Update: Best bread I've ever eaten, but it is HEAVY! That loaf must weigh over 2 pounds! But damn the calories, it's so good I'll just ride my bike an extra 20 miles to work it off. Thanks for the recipe! By the way, I've never baked anything in my life and this was fun! Have to make it a once in a while treat though.

The best thing about tasty videos is that they know most people are NEVER going to spend 3 days proofing, folding, and resting their dough. They're just like "Here. Won't impress Gordon Ramsey but it'll be delicious and so easy a beginner can do it."

I made it today just as suggested. I did have to add a bit more water (about 1 tbsp) because I used AP flour. It turned out great and delicious. Highly recommend.

I made this recipe for a Thanksgiving get together and we just ate slices of the bread as is and got compliments all night. I roughly chopped a few cloves of garlic and some onion too. I think the garlic added a lot but didn't notice the onion too much.

"Dutch oven" refers to the pot used to cook the bread in. I see many people say, "I'm Dutch and never heard of this bread". I think the pot derived the name because the original was made using a Dutch process in metal casting.

2:10 Did anybody notice that the parchment paper is stuck to the bread after it comes out? You can avoid that by removing the parchment paper after the first 30 minutes.

That's a good idea and will contribute to the crust at the bottom. Just don't forget to oil the bottom of the dutch oven before putting the loaf back in.

I made it, used capsicum instead of halopenos and added onion and some garlic, it was out of this world. Ended up needing to add nearly a half cup extra flour because it was so wet, but will definitely be making this regularly.

I would add some poblano peppers in smaller pieces. Because cheese and poblano peppers make a tasty pair. I have pepper jack cheese and poblano peppers on hand - might be making this tonight to have with eggs in the morning. Anyone that doesn't have a Dutch oven can just use any OVEN SAFE dish with high sides and cover top of bread with parchment paper or aluminum foil. That's how I used to make loaves like this before I bought my first dutch oven years ago. Important thing is that the loaf is covered for the right amount of steam/moisture that gives great crust at the start of baking.

I made this bread tonight and I had to increase flour to 4 cups because it was way too sticky. I believe the recipe ingredient list is wrong. By increasing the flour by half cup the dough turns out just like the video. The ratio of flour to water is typically 1 cup water to 2 cups flour. I used bread flour and Saf-Instant yeast. Instant yeast can be added directly in with flour and active dry yeast needs to be dissolved in water. The recipe is using active dry because the instructions state to dissolve in warm water. I also did not use parchment paper instead I sprayed baking non-stick spray and did not preheat my Dutch oven. I have a ceramic Lodge Dutch oven and preheating can damage the ceramic coating. This on Lodge's website. I plan on making it again using all purpose flour instead to see if there is a difference. Update: I made this with bread flour and the bread is a little bit softer and lighter than using regular flour. I like both and really do not have a preference. Increase the flour to 4 cups because the wet to dry ratio is wrong. I also added fresh garlic and different herbs. Love this recipe it is very versatile and adaptable.

Just tried it today it worked! But of course for those who are used to the sourdough version, the taste is not the same. But this recipe is delicious too- would up the notch by toasting them & adding some garlic butter, etc.

made it last night and it was a fail! do you need to let it rest for 1 hour and then 30 resting inside a heated oven? and don''t you have to spray nonstick spray bc my paper got stuck!

Emily Miller Put the bread on a cookie sheet and place a oven safe dish over the bread. Halfway through baking take the dish off so the bread can brown.

Ok I bought the jalapenos and cheddar cheese and a 5.5 quart dutch oven and it is cast iron with enamel porcelain. But the instructions say not to heat it in an oven while it is empty. But, what do you say I should do ?

Go ahead and do it, I make bread this way all the time. The only thing you have to be careful about is if the lid has a plastic type knob, if it does you will need to replace it with a metal one.

I used pickled jalapeños and it worked fine just make sure to like dry them and chop them up
