These days the panettone is king. So I thought I'd give you two quick versions of this traditional dessert: the first is a direct dough and the other is made using BIGA. The latter is a less usual recipe, but still gives good results.
I propose these panettone both natural and with two very tasty fillings.
The choice is yours.
- 1st Version -
INGREDIANTS:
500 gr. of manitoba
50 gr. of corn starch
180 gr. of sugar
15 gr. of brewer's yeast
200 ml. of warm water
5 egg yolks
150 gr. of butter
1 vial of orange flavoring
150 gr. of raisins
70 gr. of candied fruit
For the glaze:
80 gr. of icing sugar
50 gr. of chopped almonds
2 egg whites
- 2nd Version -
INGREDIANTS:
750 gr. by * BIGA
3 gr. of salt
400 gr. of flour
50 gr. of corn starch
160 gr. of sugar
10 gr. of brewer's yeast
4 egg yolks
90 g. of butter
1 vial of orange flavoring
200 gr. of raisins
70 gr. of candied citron
For the icing:
100 gr. of icing sugar
1 vial of orange or almond flavoring
Just a drop of water (to taste)
