Servings: 7 - 8
►Ingredients for the Chicken Biryani
1kg or 3 and half cups Sella or Basmati rice
Lukewarm water to soak the rice
1.5 to 2 kg of chicken medium cut
3 medium sized onions thinly sliced
1 whole garlic bulb and 120 grams ginger (blended together)
1 cup plain yogurt
5 large cooking spoon or 15 tbsp. of sunflower/vegetable oil
2 tbsp. kewra water
5 cups of water (use the same cup that you used to measure your rice)
►Whole Spices
4 black cardamoms
5 bay leaves
Half a cinnamon stick (cassia bark)
12 cloves
5 green cardamoms slightly crushed
3 whole mace
2 nutmeg slightly crushed
1 tsp. saffron
1 tsp. whole black peppercorn
8 dried plums
►Ground Spices
1.5 tsp. garam masala
2 tsp. crushed red chilies
2 tsp. coriander powder
1.5 tsp. cumin seeds
1 tsp. caraway seeds (Persian cumin)
2 tsp. red chilli powder
3.5 tbsp. salt
If you don't have some of the spices then use what you have (salt, red chilli, cardamoms, cloves, whole black peppercorns, plums, cumin seeds and coriander powder are required)
You can also use store bought biryani spice
