►Ingredients for the Mutton Biryani
►For the Biryani Spices
You can use a store bought biryani spice instead (110g for this biryani recipe) FYI, these biryani spices already have salt.
2 tbsp coriander seeds
2 tsp fennel seeds
2 tsp cumin seeds
2 tsp black cumin seeds
4 green cardamoms
2 black cardamoms
4 cloves
1 mace
A small piece of nutmeg
3 bay leaves
1 small cassia bark
1 tsp black peppercorns
Half star anise
3 Kashmiri red chilies
5 red chilies (add more for extra heat)
1 tsp citric acid
1 tsp turmeric
7 dried plums
►Marinating Mutton
2kg or 4.4lbs mutton or lamb with bones (leg or shoulder)
85g or 3 whole small garlic bulbs
80g ginger
75g or 7 green bullet chilies
Some water
Use half of the paste and save half for later
2 tbsp biryani spices
2 tsp salt
►Cooking Mutton/Lamb
200g or 2 - 3 red onions
1 tsp salt
2 black cardamoms
5 green cardamoms
1/2 tsp black peppercorns
2 cups or 470ml water
►Main Biryani Prep
1.2kg or 6 UK cups of sella basmati or basmati rice (soak and wash)
600g or 5 - 6 red onions
450g or 3 large tomatoes
Leftover ginger garlic chili paste
Handful coriander
Handful mint
2 tbsp kewra water mixed with 1 tsp saffron
1 tbsp kewra, 1 tbsp water mixed with 1/4 tsp egg yellow color
1 tbsp kewra, 1 tbsp water mixed with 1/4 tsp orange color
2 cups stock (use as shown in the video)
Thinly sliced lemon
500g natural yogurt
Leftover fat from mutton/lamb
7 large cooking spoon full of sunflower oil or ghee
1 tsp salt (Taste and add more if needed)
►Cooking Rice
Enough water to cover the rice (2 inch above the rice)
1 tbsp salt
1 cassia bark
7 green cardamoms
7 cloves
Juice of whole lemon
2 tsp kewra water
►For the Sauce
7 red chilies soaked in hot water (use less if you want)
2 tomatoes
Half young mango
2 garlic cloves
1 tsp coriander powder
1/2 cumin
1/4 cup tamarind pulp
1/2 tsp salt (taste and adjust)
1 tsp sugar
1 tbsp lemon juice
1/2 cup water
