The violet is a cool trick. This isn’t Swiss merengue buttercream, though. The eggs in Swiss are heated with granulated sugar and then whipped

I’m a wildlife and landscape photographer from East Tennessee. When I’m editing photos and there’s too much green on like a bears coat casted from its surroundings(because I live in a temperate rainforest) I add some pink to the bears coat in Lightroom. So it works on cakes, and bears lol

I always thought Swiss meringue buttercream was more difficult to make. That’s a LOT of butter but probably delicious!! Thanks for sharing!!!😘💋 I always just did a buttercream of powdered sugar, vanilla & room temp butter. Soooo much better than canned, store bought icing!!🧁🎂

Swiss meringue buttercream is my favorite! I've never seen it made this way before though. I usually do the whole process of separating the eggs, and adding egg whites, cream of tartar, and granulated sugar over a double boiler, then move it to the kitchenaid to add the butter and flavor. Omg this looks so much easier! Does the flavor turn out like a traditional Swiss meringue??? I always end up making lemon curd or pudding with the egg yolks, and have so much left over it is ridiculous! None of my friends really like sweets lmao

I don't know if it's just my taste preference but I feel like powdered sugar gives me an aftertaste so to make the traditional Swiss meringue easier, I just use pasteurized egg whites and use granulated sugar, put it in my kitchen aid mixer, use a double boiler and heat it enough to make sure that the sugar has dissolved completely, and then whip the meringue, add butter, that's it. I've also found that Swiss meringue BC recipes that use real sugar tends to use a less amount of sugar than when they use the easy Swiss meringue BC with powdered sugar. I don't know why that is but it bothers me that one recipe uses more sugar than the other.

the reason why adding violet makes the meringue white again is because yellow and violet are complementary colors so adding a small amount of violet will cancel out the yellow just like hair cancellation which you mentioned in the video :) This will also work with other complementary colors such as red and green and blue and orange

Purple is actually the complementary color to yellow! Since it’s made with blue and red mixing yellow or vice versa cancels out. It’s the same with orange/blue and red/green! Hope this helps!

yeah, it's color theory. yellow + purple are on opposite ends of the color wheel so they cancel each other out.

I've always bought whole eggs, separated them, and pasteurized them myself while mixing in granulated sugar 😩 so much work. Now I usually don't make meringue buttercream because my kid is allergic to eggs, but dang that's so much easier than how I've been doing it.

To be honest, the mixing covers for the Kitchen Aids kinda suck, lol… The powder still flies everywhere. The cling wrap method is the best method

I would just like to say that the color-changing thing both at hair salons and that you did here is all because of Color Theory! The opposite of yellow is Violet, which is why it "canceled" out. That's also why whenever your hair comes out a little orange-y or bronze looking after a bleach process, you often use a blue shampoo, because orange's opposite is blue :D

Yes, you should not fully melt the butter, it will not mix well. It just has to be super super soft
