Thanks for the video. I just made the custard and it had a faint flavor of liquid smoke and meat since I did a pork roast a week ago. I see that people do a 2 min steam with lemon water to get rid of orders when switching between meat and sweet.

I do wash mine with baking soda and very hot water.. all and all did it come out good beside the smell?

I bought a pack of three different color seal rings from Amazon $8. I use red for any meat and spaghettini or savory foods, white ring for plain rice or pasta, blue for custard, cheesecake or puddings. That way you have no cross contamination of flavors.

That would be a “Bain-Marie”, I believe...a water-bath in French...that keeps a “crust” from forming on the surface of the custard. A pudding has ingredients that are whisked together in a heavy pan over low heat, then poured into Pyrex dessert cups and refrigerated till serving time...custard is baked in a hot water bath already poured into the ramekins, then chilled. Of the two, my favorite is egg custard made using honey rather than sugar but when making coconut cream pie or banana pudding, I use an old recipe for homemade vanilla pudding.....SO muc h better than store bought instant pudding or store bought cooked pudding.

Yes you were right, my mama was born in 1907 also called any dish for custards ramekins too they don't have to be white.

I just got mine in the pot. My custard cups would not stack the second layer so i put a silicon cover on the first layer so the second 3 would sit on that. I put a parchment round over the second layer to keep any moisture from dripping into the custard. I hope the 8 minutes will work.

Hello Main, in cooking this recipe you did a quick release of the pressure at the end of the cooking, my question is was this cooked at high or low pressure? Thank you in advance. Richard

Do it on low pressure and let the steam release naturally that's part of the cooking process. I also mixed the nutmeg in with the mixture gives it a much better flavor but you can give a small dusting of nutmeg on top also. I did 5 minutes, 8 minutes I think was too much.

Can you provide a link to your ramekins? Are they 4 oz, 6 oz. Or 8 oz? Also, your receipe calls for whole eggs, does that mean the white part of the eggs too?
