I want to give you guys useful baking information with recipes that never fail ♥♥
It's pretty annoying when custard cream and eclair don't rise up well.
Today I brought recipe that would not fail♥
I hope my video is helpful :)
Custard Creme Recipe
4 egg yolks
White sugar 120g
Cake flour 50g
White milk 250ml
Vanilla extract
Fresh cream 100g
Sugar 20g
Puff recipe
Butter 50g
Salt 2g
Water 120ml
Cake flour 75g
2 Large eggs
Preheat 200℃ 10min
180℃ 25min
-About Custard Cream
It's a super simple recipe that we can use a 1T measuring spoon♥
4 Egg yolks, white sugar 8 spoon, cake flour 5 spoon
Mix while adding milk little by little
sift out cream chunk
Wrap the bowl and put it in microwave for 30 seconds
Stir fast with hand whisk. If you stir it fast again for 3-4 times, the custard cream concentration will be in best condition. ♥
Cool the cream by putting the wrapped bowl in the fridge for a while. When it's cool, mix it with fresh cream :)
-About Puff Custard
Simmer on low heat, use thick frying pans that takes a while to heat up
Mix warm butter, salt, water with cake flour
Simmer it on low heat (stir process)
It is better to over stir than to less stir so if you use a well coated frying fan, please stir for 3 minutes on low heat :) Then it would be perfect! ♥
Put the stirred dough in a bowl and cool it.
While it cools down, add stirred egg by three separate times.
(You don't need whisk, it mixes well enough ♥)
The dough must be stretchy rather than watery and not crack
Apply enough water after panning and bake it by gently pushing the pointy tip of the top. In this way, the custard dough will rise up very well ♥
Oh one thing! preheat at 200℃ for 10 minutes before baking ♥♥
