▋Introduction
最近我逛菜市场的时候,遇到了那种一整条的超级超级大的胖头鱼,一看到我的脑海里就浮现出了鱼肉百吃,于是果断扛了一条回家。所以今天的节目里,我打算教大家如何解决掉这条胖头鱼:鱼头做成剁椒鱼头,鱼身子晒成咸鱼。
腌好的咸鱼呢,我会在今年的年夜饭里用它做个菜,大家到时候别忘记来看哦~
▋Ingredients
剁椒鱼头:
鱼头约1kg
剁椒100g
野山椒10个
豆豉一大勺
姜一小块
蒜头2瓣
盐一小撮
料酒2大勺
生抽一大勺
蚝油2小勺
糖一小撮
葱2根
香油一大勺
咸鱼:
鱼身子约2kg
粗盐200g
花椒一大勺
白酒2大勺

fish head about 1 kg
100g preserved chilli
10 pickled wild chilli
1 tbsp fermented soybean
small piece of ginger
2 cloves of garlic
pinch of salt
2 tbsp shaoxing wine
1 tbsp light soysauce
2 tbsp oyster sauce
pinch of sugar
2 spring onions
1 tbsp sesame oil
[salted fish]
2kg fish
200g rock salt
1 tbsp szechuan pepper
2 tbsp Chinese liquor
