I'm just making a batch now. I only had 1 medium chicken carcass left over from a roast yesterday but had quite a bit of meat to go in the stock also. So far, so good.

A slightly different take from putting the chicken pieces into the gravy like you did in your previous recipe which I think is fantastic by the way, is this method better for taste? Looking fwd to the recipes,thanks Din 👌🏻

This method is very similar, using the carcasses , but we had to leave old the carcasses from the base because of vegetarians ! Try it both methods are good , but this method was better for us because of the amount of precooked chicken we had to cook!

Gas is the best in my opinion,I find induction easy burns ! But I do like induction as you can set timers !

Chef,, I have just made a batch of your base gravy and am going to freeze it in portions, what size portions do I freeze say for 4 people..

At a rough guess I would say 1000/1200g for 4 person, before you use the base gravy bring to the boil and then add water if needed before you start cooking your curries, you’re in for a treat, remember to watch tutorials first before you start cooking and watch what I do and the thickness of the gravy before you start!!

Sorry there just isn't a recipe for base gravy. The best restaurants which are few and far between these days just keep adding to their base gravy and layering the flavour profile of it. You cannot just come up with a recipe for something that complex.

Sorry to burst your bubble, real BIR curries are not cooked that way! I should know I have run Resturants for over 40 years and worked with chefs who started indian restaurants in the 60s and 70s , so if you want to see how it’s done then don’t miss any of my episodes, and your find all the written recipes in the description, where it says more at the bottom of the videos!!
