Easy Salt Rising Bread Recipe
Makes about 12-13 pieces (50g each)
Bake at 175ยฐC for 12 minutes (+/-), adjust the time depending on the color
Ingredients:
- Strong flour: 245g
- Weak flour: 125g
- Milk powder: 15g
- Sugar: 25g
- Honey: 3g
- Salt: 5g
- Fresh yeast: 7g
- Milk: 225g
- Water: 10g
- Unsalted butter: 35g
For the bread filling:
- Salted butter: 6-7g
* I've used brands and ingredients that can be easily obtained in the neighborhood rather than the most expensive ones. It would probably taste even better if you used more high-end butter and flour, right? ๐โโ๏ธ
* You can put milk, honey, and water in all at once.
* The workshop temperature on the day was about 25 degrees (air conditioning on). The fermentation temperature was room temperature, around 26-27 degrees since it was late evening. It was a bit humid because it was a hot day, but I didn't check it specifically.
* After testing various recipes, I recommend this one because it has less variation and is easy to make even if you bake it multiple times, perfect for home bakers.
* I used a KitchenAid mixer, and I mixed it intensively for about 15 minutes without straining the machine. Please take it easy and don't overwork your machine.
* First fermentation for 40 minutes + divide into 50g pieces and shape like tadpoles + bench time for 10 minutes (during this time, portion out the butter) + shape into salt bread and second ferment for about 50 minutes. The dough will have risen to about twice its original size, and when you gently shake it, you should get the feeling like your cute belly fat wobbling (?). Wait until you get this feeling.
* The Unox oven I used doesn't have a steam function, so I generously sprayed water about 5 times using a spray bottle.
Bread is really influenced by the external environment. It's important to get a feel for the dough. If you bake it multiple times, you will be able to perfect your own precious salt bread! Bon Appรฉtit!
