If you love Hasselback Potatoes (see Door County Girl #101), you're going to love Hasselback Beets. Kit and Rolf give us the lowdown on this popular Swedish preparation method, which is amazingly easy and tasty (even if you're not a vegetarian like Rolf!).
RECIPE: Hasselback Beets
INGREDIENTS:
4 good sized beets, cooked and peeled
1/2 stick butter
2 T fresh dill chopped
1/2 cup goat cheese
1 cup sour cream
2 T fresh chives chopped
Black pepper to taste
DIRECTIONS:
Preheat the oven to 425˚. Slice beets without fully going through them, so beets remain whole. Melt butter in a small saucepan or in microwave until melted. Add dill and give it a light stir. Put beets in a small roasting pan and brush dill butter mixture on and into sliced crevices of beets. Roast beets in oven for 15 to 20 minutes until soft and caramelized.
In a small mixing bowl, add goat cheese, sour cream, chives and black pepper. Mix until smooth. Plate beets and give a generous dollop of goat cheese mixture and serve.
