Ingredients
- 350 g of 750 wheat flour
- 75 g of broken rye
- 100 g of rye sourdough
- 300 ml of water
- 10 g of fresh yeast
- 1 teaspoon of salt
- 1 tablespoon of olive oil
Preparation
1. Pour hot water over the broken rye;
2. Make a starter from 100 ml of water, yeast and 2 tablespoons of flour;
3. Cover both bowls and set aside for 20 minutes;
4. Add the starter to the rye and mix;
5. Add the flour, salt and olive oil, cover and set aside for 15 minutes (but no longer);
6. Knead the dough by hand (or in a planetary mixer) for 10-12 minutes until smooth;
7. Form a ball, place in a bowl, cover and leave to rise for 1.5 hours;
8. Transfer the dough to a basket, cover and leave for 1 hour;
9. Transfer to a baking sheet, cut and place in a preheated oven;
10. Bake for 50 minutes at 220°C
