Tutorial Béchamel Sauce

材料:
牛奶 3 杯
洋蔥 1/4 個
丁香 2-4顆
月桂葉 2片
荳蔻粉 Nutmeg 少許
紅椒粉 少許
鹽 、白胡椒粉少許
淺色奶油麵糊:
無鹽奶油 30公克
中筋麵粉 30公克
做法:
在鍋中用小火加入奶油、麵粉中火加熱,煮成淺色奶油麵糊,關火,稍放涼。
把牛奶放在鍋中加熱,
把一半熱牛奶加到麵粉糊中拌煮均勻,然後再加入另一半牛奶加熱,煮沸後轉小火。
加入洋蔥、丁香,紅椒粉和荳蔻粉 nutmeg 煮沸,小火煮約 7-8分鐘,取出洋蔥、月桂葉。煮至濃稠。
Béchamel Sauce 貝夏梅醬汁(牛奶白醬)
Ingredients:
3 cups milk
1/4 onion (peeled)
2-4 whole cloves
Pinch of ground nutmeg
2 bay leaves
Salt and white pepper to taste
White roux:
30g unsalted butter
30g all purpose flour
Method:
In a saucepan, melt the butter over medium heat and stir the flour. Stir until it is fully incorporated into the butter. Off the heat and let it cool a bit.
Heat the milk until hot.
Pour half the milk into the roux over medium heat, mix well, and then pour in the remains hot milk and stirring.
Add the onion, bay leaves, cloves, paprika and nutmeg. Cook over medium low heat and cook for 7-8 minutes until thicker. Remove the onions, cloves and bay leaves.
