Even though there are core components to it, it's still highly customizable, with some vendors giving you a selection of assorted pickles, cured meats, egg yolks, and veg to choose from and even modifying the core ingredients a little, like putting in a little black rice into the white rice to make the whole thing purple. Taiwanese here and I approve this Fan Tuan. Since Modern Taiwanese food is all about deconstructing classical dishes then infuse new elements so if Japanese can accept avocado why can't Taiwanese. That being said I would tweak couple of things, personally I feel that the soft gooey nature of avocado kind of defeat the purpose of crispy type fried curler, so I feel chewy type curlers will work better. And I really feel pork floss just don't have enough to punch through or work with avocado's mild taste so I would replace it with bacon strips or sausage. Stay safe!
