Fantastic Russian honey cake Medovik // Russian honey cake
Today I teach you how to prepare one of my favorite Medovik honey cakes. It is a traditional Russian cake with very very thin biscuits. It has a caramel and honey flavor. There are many Medovik recipes, but this is my favorite.

For cupcakes:
2 eggs
220 gr sugar
Honey 2 spoons
Butter 100 gr
1/2 tablespoon salt
1 tablespoon baking soda
Flour 430 gr (No more!)
For the cream:
3 yolks
220 gr sugar
Cornstarch 20 gr
Milk 250 gr
Butter 300 gr.
Vanilla if you like
For dough:

220 gr sugar
Honey 2 spoons
Butter 100 gr
1/2 tablespoon salt
1 tablespoon baking soda
Flour 440 gr (No more!)
For the cream:
3 yolks
220 gr sugar
Cornstarch 20 gr
Milk 250 gr
Butter 300 gr.
Vanilla if you like
1. For the cake, mix the eggs with sugar well in a pot. We add butter, honey and salt. Heat over a simple medium heat mixing until it starts to boil. When the first bubbles appear, remove from the heat, add baking soda and mix well. The mass will begin to increase.
2. We wait about 5 min and add the flour little by little and mix well. You cannot add more flour than what is written in the recipe! Leave the dough in a pot for 1 hour at room temperature, covering the pot with a cloth.
3. For the pastry cream: In a pot, mix the yolks with sugar well. We add milk and cornstarch. We heat the mixture on a medium or low heat ALWAYS MIXING until it has a creamy texture. We cool the cream.
4. The soft butter must be beaten with a mixer for 5 min. Then we add 1 spoon of pastry cream and each time we beat very well. So we add all the pastry cream to the butter.
5. We divide the cake batter into 8 portions. Place one portion on the baking paper, roll very very thinly and bake 180 gr for approximately 5 min until golden brown. Then we cut from our cake a round shape with the necessary diameter. (I am 20 mm) This is how we all do.
6. We crush the cake margins that we have cut. We assemble the cake. In each cake we place the cream (more or less 2 spoons), then again the cake. On the outside on top and on the sides we also cover with a cream. We cover the cake with crushed dough. Leave for the night in the fridge!))
