If you use a mason jar you can put a Ziploc bag full of water on top to keep everything submerged and also get rid of all the air space. The water in the bag also allows for air to escape as it ferments. It seems obvious but I just learned this little trick. You don’t want air in your jar or else you could get mold so I’m not sure how that’s gonna work out there but looks like you know what you’re doing in the kitchen

I’ve used a tick that i found at the beach. It was cleaned from years of being in the rough salty waters of puget sound. I’m sure if anything it has salt content which seems that it would actually be a good component. I took my jars with me to the beach so I could find the right fit for both regular and wide mouth. I still use them although I now have the glass tops now too u

I’m pretty sure Brad didn’t use iodized table alt in Ferment. I’ve not heard anyone recommend It. Is that what you always use and have you done well with it? It seems so frowned upon in the fermentation community. Curious to find out! Thanks😊

try it in a salt brine the same way you'd ferment sauerkraut
