Make raspberry vanilla syrup. For every pound of berries use 1 cup of brown sugar and 1 tablespoonor lemon juice. Put the berries in a pot and top with the sugar and lemonjuice. Cook on medium low for 15 minutes. Strain through a fine mesh strainer to catch the seeds. Add 1 tsp vanilla extract or paste. Hot jars, hot canner. Waterbath for 10 minutes for under 1k feet.

Raspberries are one of my favorite fruits next to mangoes and peaches. I don’t even like raspberry jam so much because over cooking spoils the flavor. My favorite thing to do with them is a European style tart with a sweet crust, a layer of cold custard mixed with whipped cream, topped with a layer of raspberry topping. A small jar of raspberry jam is heated and folded into a bowl of fresh or frozen (uncooked) raspberries and then cooled for the topping.
Put a rubber washer on the handle that twists in, add a bit of oil to that area. Poof, the leak is fixed! I have the same mill and my husband solved this issue for me.

Another beautiful harvest and a wonderful assortment of uses. I’ve been wanting to try the soup recipe but haven’t gotten to it yet. I have been washing and coring the tomatoes as they come in and then putting them in the freezer until I have the time and energy to process them. I’ve heard a couple of folks rave about the freezer pizza sauce, I guess it’s time I gave that a try too! I’ve never grown the Oxheart tomato variety but you’ve mentioned it before so I think I’ll give that a try next year too. Where do you get your Oxheart seeds from? I did grow Amish Paste this year and have had very good luck with my plants. These are the healthiest plants I’m growing this year and although they seemed late to set fruit, once they did it’s been a very prolific crop. No problems at all with the fruit and I’ll do those again as well. This week The Traditional Skills Summit is taking place and today is day two of free classes. Just about the time I was hitting a wall with the garden ‘to do’ list, planning for next year, and of course the ongoing harvest, I am feeling inspired again and ready to move into fall with all the things! Have a wonderful week Kelsey, great to be inspired by you and your faithfulness to your family.

I always wonder when a recipe calls for say the 8 pounds of tomatoes should it be weighed after you have cored them?

I have always weighed first, the prepared as instructed. It said “8 lbs tomatoes, cored and halved” so I read that as two parts, 8lbs tomatoes and then cored and halved ☺️

For the soup, is there a substitution that can be used for the white wine? My tomato plants are finished. I took them out yesterday and took all the green ones inside. With what I have in the freezer, I should get one more canning out of them. I just have to decide what to can next. lol

I need to look into that, I’m not positive if it’s contributing to safety or flavor alone. Let me check!

@@seedandsparrowhomestead I would appreciate that. I really want to make a good tomato soup and it's something I could make with the last remaining tomatoes from my garden.

@@laurielyon1892 From what I've found in my resources its not something that can be substituted in this recipe for safety reasons. I know you can reach out to Ball on their website and they are pretty good about get back to you in a reasonable time frame. I believe there may be some other approved tomato soup recipes that don't call for wine. www.healthycanning.com/vine-fresh-tomato-soup www.healthycanning.com/zesty-tomato-soup Both of these are from trusted sources, Ball and Bernardin

Hi Kelsey, I have never water bathed or pressure canned (yet),still watching and trying to learn, why did you pressure can the tomato soup instead of water bathing it? Was it because of the broth?

When canning low acid foods (broth, garlic, onions) you need to pressure can. I only follow safe, tested recipes and practices. The Ball books always tell you which method to use if you are ever unsure!

There are some instances where water bath canning low acid Items are approved, like when pickling. The vinegar added corrects the ph to make is safe.
