In this video we are going to make mini cakes to make thin doughs with frolla dough, and handkerchiefs soaked with a simple syrup, filled with dulce de leche, chocolate ganache, and whipped cream.
Masas Finas or Petit Fours are bite-sized and are usually served at events. There are different styles, and they vary from Confectionery to Confectionery, each one has its own imprint. In this video I am going to show you some typical Fine Confectionery Doughs from Argentina.
It is a matter of starting to play with the combinations that you like the most.

200 gr flour 0000 (all purpose flour)
100 gr cold butter cut into cubes
60 gr sugar
1 egg
5 gr baking powder
Zest ½ lemon
½ tablespoon of vanilla essence
Pinch of fine salt

200 ml of heavy whipping cream (+ 36% fat)
60 gr caster sugar
20 gr powdered milk
