he will cook those tomatoes within the same day. not really the end of the world. his restaturant has 4.5 stars on google reviews with 263 reviews.4.8 on facebook with 182 reviews. must be doing something right

By paying attention 100% of the time and adding ingredients in the right order etc. He doesn't let enough time go by too fast and keeps an eye on the pot which most folks fail to do as they whip up their recipe. DJ is on it full time like any chef/cook should be, its a job. Also, keep in mind these videos are edited to save time so much of the cooking and simmering is not in the video.

Looks good whatever it is cause it is not chili if it has beans. Really like Mr. Chaplin's videos makes things look easy. Have made several of his recipes and my gf and her family loved them all.

I have to agree about the tomatoes. I peeked inside the kitchen of a local Italian restaurant in Newburgh NY and I cook with them all the time now. They really are the best and they freeze very well.

Where’s the cumin? Chili needs cumin. I would have also added some Worcestershire sauce in the meat, and would have added a few other peppers of differing heat plus some cayenne pepper, smoked paprika and ground Chipotle powder in addition to chipotle sauce for added extra flavor.
