🍨The floating island
🍨 Crème anglaise:
300 ml cream (30 fl.oz, 30-35% fat content)
300 ml milk (30 fl.oz)
1/2 vanilla pods
100 g yolks (5 eggs)
40 g sugar (1.4 oz)
🍨 Prepare the cream of anglaise.
1. Mix the yolks with the sugar.
2. Add milk, cream, vanilla seeds, mix.
3. Place the mixture over medium heat, stirring constantly, bring to a temperature of 167F, or until the first bubbles appear.
! Do not bring it to a boil.
4. Remove the mixture from the heat, strain through a sieve. Cover with cling film and put it in the fridge for 8-10 hours.
🍥Swiss meringue:
150 g protein (1/3 lb)
100 g sugar (3.6 oz)
lemon peel
1 tsp of lemon juice
🍥Prepare Swiss meringue.
1. Peel the zest from the lemon, add the sugar, protein, and lemon fraiche and stir.
2. Place the mixture in a steam bath, over low heat and with constant stirring, bring to a temperature of 122F - the sugar should dissolve.
3. Remove the mixture from the steam bath and strain through a sieve.
4. Whisk until steady peaks.
🍨Pick up the dessert.
1. Pour the creme anglaise into a deep bowl, place the meringue in the shape of an island on top.
2. Fire the meringue with a gas burner.
3. Decorate with berries, or nuts.
