When you think of warming comfort foods few can compete with the satisfying simplicity of sweet, tangy baked beans. In Nova Scotia, where I live, Saturday night was traditionally baked beans and these are a great example of that.

Recipe:
BAKED BEANS
Serves: 8
Prep Time: 30 mins.
Soak Time: 8 hrs.
Cook Time: 7.5 hrs
Total Time: 16 hrs
INGREDIENTS:
2 cups (454 g) dried white pea beans, sorted and rinsed
5 cups (1.18 L) cold water
1 medium onion, peeled
2 tsp. (10 ml) cider vinegar
½ cup (125 ml) ketchup
¼ cup (60 ml) molasses
½ tsp. (2ml) prepared mustard
Pinch black pepper
½ tsp granulated garlic
¼ lb. (100 g) bacon, sliced (cured/smoked pork or pork belly)
Salt to taste
SPECIAL EQUIPMENT
2 litre pot
Slow cooker or equivalent casserole dish
Colander
DIRECTIONS:
1. To a 2 litre pot add rinsed beans and soak overnight (8 hours) covered by 5-6 cm of cold water, then drain.
2. Add 5 cups cold water, heat to boiling, then simmer 30 minutes or until nearly tender.
3. In a small bowl add vinegar, mustard, molasses, ketchup, pepper, and bacon and stir to combine. Set aside.
4. Drain and rinse the beans again. Note: this step only aids in degassing the beans so omit if desired.
5. Add beans and 5 cups of fresh water to a crockpot or casserole dish. Add onion and the sauce mixture, stir to combine, cover, and set the crockpot on high (or bake in an oven at 250°F) for 7 hours.
6. Stir occasionally and add water as needed to keep beans covered.
7. When the beans are tender to your preference, salt to taste and serve.
NOTES:
Brown bread is the suggested accompaniment.
Play with different flavours to make these beans your own. Hot sauce, liquid smoke, cumin, oregano; any one or two of them would take this preparation in a new and exciting direction.
Sample the beans at various stages of doneness to get an idea of where your preferences lay. Often I will take a bowl when the beans are just tender but the sauce is thin making a bowl of delicious bean soup.
Make a double batch and freeze in single serving so that you can have beans as with BBQ, an English-style breakfast, or a snack whenever you like.
