thats awsome. i worked as chef for decades. i always used to do the yolks directly over the low open flame on the stove like an animal. i had the clarified butter in the hot water bath. but sometimes id do huge batches with like 20 or 30 yolks. then into a big ceramic croc and onto the shelf on the stove to hold ffor tje service. i like this guys idea. maybe i try at home. thanks for the nice video!

Any recommendations on what kind of blender to use and on what setting? I used a vitamix, and the puree setting was too high. Consistency was off so added a little water but was still too solid. Flavor was delicious though. Thanks for the video!

If you put it in a preheated thermos it could work, beacuse you cannot re heat it without damaging the sauce, it will split appart

By adding lemon you made Hollandaise sauce.

By adding tarragon he made it bernaise. Hollandaise is the base sauce which does have lemon.

There is nothing so frustrating as when we f*** up foolproof! Wanted to put this aside, sealed in a 145 SV bath. (It leaked). The second batch separated over low heat. FML
