It’s late May here in the UK which is the start of the Elderflower season. This wonderful and abundant flower has a wide range of uses due to the beautifully delicate flavour and its wider properties.
We always make the effort to venture out and forage for some a this time of year. Our preferred beverage is Elderflower cordial which can be used as a loverly, grown up and flavoursome drink on its own or added to sparkling wine for additional floral notes. You can also use Elderflower to make wine or champaign style drinks and when it comes to beer there are plenty of applications here. You can use this in a home brewed pale ale or saison. The cordial can be added towards the end of the fermentation of a beer for subtle notes in the final drink.
