staining of the skin is from the natural dye inside the sea urchin. I believe the dye was once harvested to make clothes and stuff until people figured out how to make synthetic dye in the 1980s. there's also a shellfish out there named Murex Snail that produced a dye color called Tyrian Purple that was used in ancient time. That's how Royal Purple was made.

I’m in Santa Barbara and didn’t even know we have good uni. Where did you get it there? Anyway great video and thought it was one of the best yet!

Julian G. There’s a few places but we went to Santa Barbara fish market who run out if you dont get there quickly. Probably the sweetest Uni we’ve ever had!

The reason there is so little roe in there is because the sea urchin are starving. There are to many purple sea urchin they are eating all the kelp forest. If you can take the max you can of the purple sea urchin.
