Today we go out spearfishing with Matts (Fisherman's Life) and Orville! We catch a few rockfish and perch and try to create our own elevated Fisherman's Life inspired dish aka a fancy dish heavy on butter and avocado.

Butter-Poached Rockfish with Avocado Cream Sauce
Ingredients: 1 portion of fish, 1/2 cup (1 stick) of butter, 1/2 avocado, 1/2 tsp sugar, 1/4 tsp salt, 1/2 tbsp lemon juice, 1 tbsp vegetable stock, 2-3 tbsp whole milk greek yogurt, parsley, (optional: pistachios)
1. Season both sides of fish with salt
2. Melt 1 stick of butter (1/2 cup) on low-medium heat
3. Place fish into pan; if butter sizzles, lower heat
4. Baste fish with butter
5. Flip once fish starts to brown and continue to baste with butter until fully cooked
6. Blend together all ingredients until smooth
7. Optional: chop of pistachios
8. Plate and enjoy!
Perch with Shishito Pepper Emulsion and Watermelon Cucumber Salad
Ingredients: 1 portion of fish, 3-4 tbsp olive oil, approx. 10 shishito peppers, 1/2 tsp garlic, watermelon, cucumber, and red radishes
1. Chop radishes, cucumbers, and watermelon into cubes
2. Scored fish skin (to prevent curling while cooking)
3. Season with salt and pepper
4. Heat pan on low-medium heat with any oil
5. Place in pan skin side down, and cook until skin is crispy.
6. Flip and continue to cook until fish is fully opaque
7. Using the same pan, blister shishito peppers
8. Clean up peppers by cutting of the stems and removing the seeds
9. Blend with 1/2 tsp of minced garlic and drizzle in olive oil until smooth
10. Plate & enjoy!
