When I stayed in Strasbourg with a family for a couple of months the father owned a small chain of flammkuchen restaurants, the local speciality - a ultra crispy batter type "pizza" usually with onion and bacon and sometimes cheese. Ate it every night with a couple beers. Great life for a 16 year old.

In Argentina we have something called Fugazetta. The onions are sliced thinly and cooked way less than that with Butter and oregano. You can add cheese over it, some people dont. Its an amazing simple flavour, and a great substitution for tomato sauce in pizzas, that are normally complicarted to get right in here.

Foley is a live recording of real sounds, such as a guy in a high heels stepping in sync to video, stepping onto the correct floor type, or a bag of washers for a bag of coins. If he is using prerecorded sound that ain't foley. Its a sound effect. Looking at the video a bit more, I think he using the actual sound from the video and then mixing it with his narration track.

This reminds me of flammkuchen, the Alsatian/German flatbread/pizza-type-thing with creme fraiche, gruyere, caramelized onions and bacon, which is criminally underappreciated and could easily become a hot trendy food item. If you continued down this road to develop a flammkuchen at home recipe, I would absolutely make it.

And caramelized food gets it’s own amazing flavour and sweetness. So to anyone asking, fond is just caramelized and browned food that tastes very good and intense. Unless caramelization is the same as Maillard, though I don’t think it is

Basically caramelization happens in Maillard reaction, but maillard reaction doesn't always happens in caramelization, this is because of the material. Caramelization is stricly browning/reduction of sugar or carbs, Maillard reaction is reaction between reduction of sugar and amino acids.

Hey Adam, been wanting to comment this for a while, hope you see it! I absolutely *adore* the Ragusea Method of making pizzas under the broiler. Much appreciation for figuring that one out! However, I've combined it with a trick you showed in your no-stick Neopolitan video, in which you used parchment paper under the dough. I simply shape the pizza directly on a well-oiled piece of parchment paper and then cut off the remaining paper as close to the pizza as possible. (It burns otherwise, speaking from experience here...) In the oven, bake, flip over, put toppings on, bake again, and serve! I've found that to be a great way to safely transfer the pizza onto the hot grates. It also has the added benefit of allowing you to have a very highly hydrated dough. I know unsolicited advice is rarely a good thing, so my apologies if I sound like I know better. As you always say, "You do you." Thanks for the *many* great recipes and techniques, and good luck on the move to your new house!

I will try it. I brown an onion using a touch of water when necessary to deglaze. Takes about 45 min to an hour. Then I remove it and the fond, and make B&G and then added the browned onion and fond after the sausage is seared. Then I make the gravy in the pan. I will never make it without onions again. Everyone loves it, even folks that do not like B&G. Comes out a smooth golden color.

I wonder if the way Gruyere splits is the reason why some restaurants top their French Onion Soup with mozzarella instead. I can't stand when restaurants do that; it has to be gruyere. The Mozzarella gets too rubbery with a layer that thick. This pizza by the way is brilliant. I've never tried to caramelize onions that much in a pan because they burn, but the white wine trick looks like a great way to extend the cooking time. Definitely a fan of French Onion, so this is right up my alley. My only question is whether or not I can use store-bought dough.

Made this tonight - amazing! Just used water as we didn't have white wine or stock. We did it the traditional way on the pizza stone rather than the grill. It was quite sweet, but we loved it.

Helpful tip. Deglaze with mead. It will add a natural sweetness and still rehydrate everything.

I don't have a pizza stone, but I find I can get great oven pizza by just using a cleaned and lightly oiled baking sheet and leaving it in the oven at it preheats

LOL It's like an American trying to remake Flammkuchen from memory. Not a bad idea though. I like the idea of the gruyere cheese to give it that nice rich flavour with the onions.

We have this pizza where I live in Argentina that is just sauce with onion. After all, tomato and onion are a match made in heaven. The sauce goes in pre cooked, with dried oregano, some garlic and some bayleafs to get that nice homey aroma. The onion goes in raw or briefly sauteed so that you get a little bit of that raw oomph. Also garlic and parmesan are both great condiments to put on this pizza. Some like it with melted cheese but my preference lays in the more tomato + onion approach.

One pizza which is pretty popular around where I am, is Bacon Jam pizza. Caramellized bacon and onions instead of sauce, with mexican style toppings.

Really love the creativity and that you used the caramelized onion as your pizza sauce. We have been making pizzas with caramelized onion as well and find that hiding them under the cheese helps to keep the flavor and prevents burning!

Adam you've gotta get some Bullhead shallot sauce (from your local Chinese supermarket) and use it as a pizza topping condiment (just spoon some on after the pizza is cooked). It's so so good.

I always use this method- try adding smoked mozzarella, super thin pancetta on the top and finish w truffle oil and light balsamic glaze

that pizza kinda reminds me of Flammenkuchen. It is a german specialty. It is made out of bread dough an rolled out thin like pizza.( actually even a bit thinner). Traditionally it is topped with red onion, bacon and sour cream, but you can use whatever topping you like.
