Soaking them overnight or as long as 24 hours in buttermilk makes them so much better than boiling or vinegar.

Yes it’s a must to soak in buttermilk they will be so tender soak overnight or at least a few hrs. Season meat & the flour... some people even boil first so they are tender His is flavorful from the seasoning But prolly not as tender..

I love gizzards too, but as an old guy, I put them in a pressure cooker for 30 minutes ( you know why). Let them dry on a paper towel, then moisten them with milk or thinned butter milk then flour them with seasoned flour then fry them like Recipe hound. Great video and very through. Excellent presentation! Thanks! Get that oil hot before you put them in bro!

Here's my spin on the recipe. You're gonna need egg, flour, garlic salt, salt, pepper, and oil. Rinse the gizzards once thawed. Beat eggs in bowl. Season eggs with a little salt. Go ahead and get your oil in the pan. Start heating it. Season gizzards with listed ingredients. Make sure you use your hands to mix up. Dip gizzards in egg. Dip in flour. Dip in egg again. Dip in flour. When grease is hot put gizzards in. It takes like fifteen minutes to make them.

Yeah pretty much the way i been doin it for years except never marinated them or added onions. Bout to do some right now. Also never new people boiled them first, is it better that way? I dont have the patients, soon as i think of them i gotta have them.

Denny Mahoney Boil them for 1-2 hours, depending how soft you want them, put some salt and vinegar in the water. Vinegar helps break down the toughness of the gizzards. After you fry them, they will be nice and soft with a little crunch to them and not as tough , when you don't boil them. Do two batches, one boiled and one not boiled and see which one's you like best.

Fried gizzards and grits....... Yummy! I normally fry mine on medium high for 5-8mins, then I decrease the flame until golden brown. Fully cooked and tender. No need to use vinegar but it helps.

candyberried Maybe for some, but some like them chewy. Also the reason some recepies call for boiling is because they are made in a salad style or Saucy style. Frying at high tempatures will help break them down some. So yes if you want them softer, Boil them for 1-2 Hours, depending how soft you want them, add some salt "1Tbsp" and Some Vinegar 2-3 Tbsp to the boiling water with 2LBS of Gizzards and you should be good to go.

Robert McKeown actually that's not true. You start out hot on a medium high heat then drop down to medium low. But the ultimate trick is to boil gizzards for 45 mins, then fry them.

Normally Glenisa I would agree but flour is raw tasting and does need flavour as well as the meat. Once fried it will be the same as just seasoning the meat alone. I like Gus cooking style. Not too fussy

I boil my gizzards first to make them tender. I put onion, bell pepper and season as I boil them for 2 to 3 hours. Once boil I drain and let cool then re-season them. Use mustard, hot sauce, egg wash and flour. Fry and make a homemade dipping sauce.

Damn, you got me tempted dude and i have a lb in the fridge. I'm all chillin and ready for bed and now it's on. I want some gizzards. Most use full part of a chicken. the broth from boiled gizzards is amazingly rich. Just strain it through large paper towel before using it for soup. then of course after rinsing the boiled gizzards throw them back in the pot. Add broth or water if needed and cook your noodles. Best chicken soup ever

Do you know why, sometimes when I cut into the gizzards, fresh gizzards, but they'll be green inside. Not from being old, or rotten. I buy gizzards from my local butcher shop and they are fresh. But I'll cut into a gizzard and sometimes, it'll be so green! Also, sometimes a really bad odor, not an odor like they went bad, it's a smell that is unique to just gizzards. And they are fresh, daily fresh . The green color is on the ribbed part of the gizzards that house the meaty muscle part. It holds 2 gizzards. Sometimes it'll be connected to itself and i cut it to open it, that's where it'll be. Anyone know what that is, or perhaps what causes it? Thank you

If you like them chewy there's no need to boil them. Also if you refrigerate them overnight after you put a little vinegar or lemon juice on them, the acidity of the liquid will tenderize it a little.

I am a TOTAL SUCKER for a gas station deli...I've been a truck driver for close to 30 years now & when I stop at a truck stop or a gas station that has a hot food deli & then I see fried gizzards...ITS ON!!! Nothing like fried chicken gizzards, corn poppers, potato logs, a few jalapeno peppers & a huge glass of ice tea!!! That's a truck driver lunch!!! Much love from Mobile Alabama.
