乾炒牛河 Fried Beef with Flat Rice Noodles

材料:
花生油6大匙
豆芽菜 100公克(去頭尾)
蔥2根 切段
韮黃 50公克
老抽 1 1/2大匙
糖 1小匙
河粉 300公克
菲力牛肉(牛柳)150公克
紹興酒 1小匙
鹽 1/4小匙
醃牛肉材料:
玉米粉 1/2小匙
糖1小匙
生抽 1大匙
麻油 1大匙
水 3大匙
紹酒 1大匙
做法:
把牛肉橫紋切薄片。然後將牛肉片加入生抽醬油、糖、玉米粉、紹酒、麻油、水醃約15分鐘。
河粉切約 1.5公分寬,用手撕開讓它散開。
在鍋中加入2大匙油中火加熱,把牛肉翻炒至6分熟,撈起瀝乾油份備用。
在鍋中加入2大匙油大火加熱,加入豆芽、韮黃、蔥加入鹽拌炒約2分鐘,瀝乾湯汁備用。
在鍋中加入2大匙油大火加熱,煎一下河粉,翻一兩次,然後用筷子炒散。
然後淋入老抽醬油、糖,再淋入紹興酒,炒至河粉都上色
再加入炒過豆芽、韮黃、蔥拌炒,最後加入牛肉拌炒約1分鐘。
乾炒牛河 Fried Beef with Flat Rice Noodles
Ingredients:
6 tbsp peanut oil
100g bean sprouts
2 green onions (cut into 3 cm length)
50g yellow leeks (cut into 3 cm length)
1 1/2 tbsp dark soy sauce
1 tsp sugar
300 flat rice noodles
150g filet mignon
1 tsp Shaoxing wine
1/4 tsp salt
For the beef marinade:
1/2 cornstarch
1 tsp sugar
1 tbsp light soy sauce
1 tbsp sesame oil
3 tbsp water
1 tbsp Shaoxing wine
Method:
Slice the filet mignon into 0.1 cm thick. Marinade the beef with light soy sauce, sugar, cornstarch, Shaoxing wine, sesame oil and water for 15 minutes.
Separate the flat rice noodles by hand.
Heat 2 tbsp oil in a pan over medium heat, stir-fry the sliced beef until medium cooked, remove and set aside.
Heat 2 tbsp oil in a pan over medium heat, add the bean sprouts, yellow leeks and green onion, add the salt and stir-fry for 2 minutes. Drain and set aside.
Heat 2 tbsp oil in a pan over medium heat and fry the flat rice noodles for 3-4 minutes, and use the chopstick to separate the noodles.
Add the dark soy sauce, sugar and Shaoxing wine stir-fry for a few minutes.
Put the bean sprouts, yellow leeks and green onions back into the pan, and then add the beef and stir-fry for 1 more minute.
