I've done the dish twice now. I like a cast iron skillet for better browning of potatoes. I let the roast rest...and cook the potatoes 10 min longer. Also, I make a pan sauce of dried cherries, cherry wine, shallots, and beef broth for a nice slightly sweet/savory sauce. A big hit dinner!

I made this for Christmas today and it was delicious,the recipe is very easy and the flavour is great I marinaded the lamb and left it overnight,then I put it in the oven at a low 150 degrees for an hour and then turned the heating up 180 degrees for the last 30 minutes It came out very tender and juicy

Our tonight roast was the best of all! I used this recipe plus a bit of my own addition. I added about 50 g soft butter to the rubbing mixture. Also one third of a cup red wine and rest of the cup warm water was added to the roasting dish. The rest of recipe was exactly like here. I wish I could add a photo. It looked amazing. Also extremely tender and full of flavour. From now on this recipe is going to be the one I use always! Thank you!

Tatyana, I made this this afternoon for our family for Easter and it was again, incredible! The house smelled of the lamb and the garlic and rosemary. The thing I really like about this recipe is that the potatoes are done with the roast. I don't have to mash potatoes or make scalloped potatoes, though those are good, too. Anyway, I hope you and your family had a blessed Easter. We did, in large part thanks to you!!

I looked at a bunch of recipes, and this is hands-down the best approach I like the boneless because you can season it inside and out and sitting on top of the potatoes just gives a whole other layer of flavor, soaking up all of the lamb fat.

Buy NZ lamb! I'm a kiwi girl and we have the best tasting lamb. We now live in Brisbane Australia and it's so hard to find good tasting meat and seafood here. It's very bland compared to back home.

Oh My word! I needed a recipe tonight for leg of lamb, and found your recipe. I usually do not like leg of lamb, but my family loves it, and I was blown away! It was so good!! A trick for thoroughly seasoning potatoes is to put them in a zip lock bag, pour the oil and seasoning into the bag and then shake it up with the bag closed. This will get them a great coat of seasoning and oil with ease. You can do this with any vegetable or meat that you want to season.

We typically roast lamb a little bit differently in Australia. Most of us leave it hide down so it's in the oven tray. That way it ends up what we call "the butt" which we usually don't bother with. I marinate mine in thin fountain mint sauce overnight first and then before I put in the oven, I oil it with olive oil and then I season it generously with fresh rosemary, Greek Seasoning, garlic, & dry mint flakes and a light sprinkle of garlic & herb salt. I baste regularly too... It's called an Aussie homestead style roast. They come up 👌

Hi! I typically do about 16 to 18 minutes per pound for medium doneness, so a little over 2 hours. I recommend checking with a meat thermometer and cooking to your desired level of doneness. Enjoy!

I get mine at Costco, too! They always have great lamb! I would adjust the timing based on the size. If you're roasting the entire 6 pounds, it will take closer to 2 hours. Roast to 145F. Enjoy!

The mustardy rub with all those herbs, garlic and spices spinning around in the rotisserie and basting itself in all that succulent goodness, filled my house with holiday culinary aromatics! We've been eating it for two days now. I'll go home and carve some more slices then hand it over to the lady for a hearty cold weather lamb stew. Thanks, again, it was really something special.😁 I think boneless is the way to go to get most out of this delicious recipe. That thing was so moist, tender and flavorful it's making my mouth water all over again.😄

Good morning Tatyana! 🌞 What a tasty looking lamb, I'm really lovin' your spice combination for the lamb rub. Unfortunately there's no lamb in my grocers meat dept. right now. But, I am going to make this recipe as soon as I can locate a lamb roast, bone-in or boneless. I like mine lamb roast done at about 160-165....plus I'm thinking of maybe adding some carrots to go with the potatoes. My hubby loves his carrots so I generally add them to most of my dishes. BTW....I made your Lemon Poppy Seed Muffin recipe last night. OMGoodness.....they were a hit, they came out sooo moist & lemony, my favorite flavor. 🍋I LOVE any food that has lemon in it, especially desserts!🍋 😋 Have a good day and be well Tatyana! 🌻

Excellent recipe. I made it for Christmas dinner and everyone loved it. For 8.5 pounds at 350f two hours made it a little more well-done than I would have liked so next time I'll use the meat thermometer, but overall it was a huge success!

Where do I find a string like that for cooking for the lamb?

Look for kitchen twine. You can find it next to other kitchen tools in most stores, or on Amazon :)

How long was in the oven for the roast to came out a bit pinking ??????

The timing will all depend on the size/weight of your leg of lamb. Mine took about 1 1/2 hours. I recommend using a meat thermometer and cooking to 135F

I'm guessing u can't really taste the mustard once it's cooked but do u have any recommendations for substituting it? My wife absolutely hates mustard.

Maybe you can try using whole grain mustard. It will still give the spread lots of flavor but it doesn't have that strong mustard flavor like a ground mustard has. Enjoy!

Not absolutely necessary but it does help keep everything together and cook more evenly. It will work without the twine, too. Enjoy!

You can truss the pieces together with kitchen twine to make one large piece :)
