500 g Canadian pork tenderloin, sliced ~3mm
1-2 inches Fresh ginger, chiffonade
1 tbsp Sesame seed oil
2 tsp Cooking oil
1 tsp Dark soy sauce
1 tbsp Light soy sauce
1 tbsp Cornstarch
2 Eggs, beaten
1 sprig of fresh coriander for garnish
Method:
Step 1: In a non-stick pan, pour beaten eggs to make an omelette. Set aside on a plate.
Step 2: Heat sesame seed oil and cooking oil in a wok over medium-high heat. Cooking oil is to prevent sesame seed oil from burning.
Step 3: Add ginger and fry until the edges start browning.
Step 4: Add pork and stir quickly until half cooked.
Step 5: Add dark and light soy sauce and a splash of water, and mix well.
Step 6: Make cornstarch slurry, stir into pork and bring to boil.
Step 7: Pour over the omelette and garnish with coriander.
Step 8 Best enjoyed with fluffy jasmine rice and blanched bok choy on a cool, rainy day.
