I have taken a deep dive into this guy in the last 48 hours. I have always been aware of the show, but never watched it and never really knew what it was about...but all I can say is...the guy is a better man than me....I'm quite fascinated with the desire to just "be out there", but don't think I would ever have the "guts" to actually try it for even a day...and then you realize from the Garden of Eden until like 1901 this is how everyone had to survive...and the utter nonchalance in the way he talks about this life is just freaking amazing to me...like, "Yeah I was stalked by a pack of 20 timberwolves this one time...and uh...they were all just kinda watching me and salivating from about 50 yards away from my cabin, so I had to shoot like 3 of them otherwise they'd just think I'm an easy meal...what can I say it worked out." In Finland it's tradition to hang meat out dry in the spring. The idea is to do it when it's cold at night and warm at day so the meat freezes and melts. I did it with horse meat and it's good.

And this is why I’m so upset that they didn’t bring him back. He’s the ultimate. Haven’t watch the show since.

7:10 it’s almost as if he’s describing dry-aging or some umami process.
