The traditional recipe uses ground pork but feel free to use any ground meat you like, such as, chicken or turkey. Optionally, omit the meat entirely and double the mashed mung bean recipe for an all vegetarian option.
Glutinous Rice Balls recipe:
Ingredients for about 50 rice balls :
Filling:
100g peeled split mung bean
500ml water
30g dried shrimp
100g minced pork
2 Tbsp vegetable oil
20g Minced shallots
1/2 tsp chicken powder
1/2 tsp sugar
1/4 tsp salt
2 Tbsp of coconut milk
1/2 tsp ground pepper
10g chopped green onions
1 Tbsp dried shallot (optional)
Dough:
250g glutinous rice flour
1/4 tsp salt
125g warm water
25g rice flour
125g water
2 Tbsp vegetable oil
Dipping sauce:
3 Tbsp sugar
2 Tbsp fish sauce
4 Tbsp water
1 Tbsp lemon juice
Minced chili(optional)
