INGREDIENTS:
1 big onion
20 whole dry Kashmiri red chilies
12 pods of garlic (Lahasun)(Pūṇṭu)
3 inches of cinnamon (Daalacheenee)
(Llavaṅkappaṭṭai)
½ teaspoon cumin seeds (Jeera) (Cīrakam)
A small chunk of tamarind (Imalee) (Puḷi)
1 inch of ginger (Adarak) (Iñci)
10 cloves (Laung) (Kirāmpu)
2 teaspoon sugar
1 teaspoon pepper
1 teaspoon of salt
Vinegar (Siraka) (Viṉikar)
METHOD:
On a low flame, for 8 minutes roast the onions.
Allow it to cool and peel off the black color skin.
Cut the onion and ginger to fine slices and grind them together with all the other ingredients.
Adjust the vinegar till you get a fine smooth paste.
